Hi Laura. What I do when using Siri is turn off the speech with a three finger double-tap because I find with me anyway that Voiceover sometimes interrupts Siri when she’s speaking. If you have Voiceover on but the speech off, when you’re done composing your text message, she’ll read it out to you and then ask if you want to send it. As for reminders, not sure if she reads your reminder but somebody else can answer that. HTH.
