This has not changed for me. I just tried this with 3 different emails which have phone numbers in the signature of the message. A regular double tap on the phone number prompts me to either Call or Cancel. If I double tap and hold I get more options like to Call, Send Message, Add to Contacts, Copy, Cancel etc.
