Just tested this and it seems to all work just fine. Here is what I did:

In the Apple Store app I selected the Products tab.
Now I selected MacMini by double tapping on it.
On the next screen I saw I think 3 different versions:
2.5 Ghz Dual Core I5 processor, 4 Gb of RAM and 500 Gb hard drive for $599, 
2.3 Ghz quad core I7 processor, 4 Gb RAM and 1 Tb hard drive for $799
Mac Mini with OS 10 Server, 2.3 Ghz quad core I7 processor $999

I double tapped on the first one, the basic model with the I5 processor. The
next screen opened, it repeated the specs, told me there was free shipping
and that it was available to ship within 24 hours.
After that was a $599, button. I double tapped on it and was asked if I
wanted to turn Express Checkout on, I tapped No and the next screen opened.
Here I had 4 RAM choices, the 4 Gb was announced as selected and I was able
to double tap on the 8 Gb or 16 Gb option and select either one of them. I
also had choices to add an external hard drive, keyboard, mouse, trackpad
etc.
As I added stuff I could check the price at the top of the screen which
updated according to what I added.

Now, as I am writing this I went back to do this and now when I double tap
the $599 button I think I can see where you get stuck. At first nothing
seemed to happen, but when I checked the screen it appears that that button
turns into a Continue button and you have to double tap on it as well before
it goes into the customize screen where you can pick different RAM and add
accessories.

It also appears that once you double tap on the price button if you touch
the screen elsewhere to see what it says you cannot swipe left or right to
find the Continue button, you have to find it by sliding your finger around
the screen until you discover it and then double or split tap on it.
If you find the price button with your finger instead of swiping to it and
then split tap on it and if you keep your finger in place the Continue
button appears under your finger and Voiceover announces it and you can just
leave your finger where it is and split tap a second time.

Hi all,
This might sound like an odd problem, but I have noticed that, in the newest
release of the Apple store application, I cannot configure computers. In
previous versions, I could select the base model and then select additional
options, such as adding RAM or changing the processor. Now, I cannot find
anyway to do this. The price of a given model is indicated to be a button,
but double tapping it does nothing. I can find no other Controls that I
think might help. Has anyone figured out how to do this?
