I understand all this, but I just wondered if there was a way to send an i 
message or make a face time call just using someone's email address that is 
not in your phones contact list.

  The way Facetime works is that it associates the device you're using with 
an Apple ID and then with email addresses and phone numbers. When you make a 
Facetime call, you give the Apple server an email address to contact, it 
then reaches out and sees if that address is associated with an Apple ID and 
if so attempts to initiate a call to devices associated with that ID. That's 
why someone with an iPad and iPhone or other combination of Apple devices 
will hear them all ring when receiving Facetime calls. Someone with a better 
technical background might be able to correct me or explain better but I 
think that's the general idea. :)
