I still prefer ripping to mp3 format because it is the universal music format with a host of free utilities available to play and manage the files. I still like listening to music on my first generation Victor Reader Stream which does not play the Apple AAC format. I typically rip music tracks at either a 192K or 320K constant bit rate.
With all the options available, one exists to meet your listening and any other specific needs you might have. I use iTunes to convert Apple format AAC songs to mp3 and it does it quite well. I normally rip audio CDs using my primary media player, Media Monkey. Maybe that would have held wait 4 years ago when music bought from iTunes was DMA protected, or further back before iTunes was the number 1 seller for music in the world but now? No way. What major digital music player, or software doesn't play AAC? I mean, Android plays AAC, Windows phone plays AAC, blackberry plays AAC, windows media player, and on and on. So, how exactly does using AAC lock you into using 1 company's products to play music?
