Jordan, Go to Settings, Notification Center. Each app is listet here, you can double tap on the apps and then specify if you want a particular app to be included in Notification Center, which style of Notification you want (Banner or Alert) and whether you want the Notification to also appear on the lock screen. This is actually identical to iOS 6 if I remember correctly.
In addition there is a Setting in the Accessibility Settings under Voiceover which says "Speak Notifications in Lock Screen". You can turn that off as well although if you disable to have any notifications displayed in the lock screen this should not be a problem.
