It cannot be turned off unless you switch to standard typing which means you have to double or split tap each letter. You will have to train yourself not to leave your finger on one letter for too long, if you feel you need a break and you don't want to lift your finger if you are on a letter just move to the Return key at the bottom right and you can lift it without anything happening. I find it's mostly just a matter of getting used to this.
