Unified Timeline will toggle this on and off. When off, the Tweets button shows your timeline of tweets; when on, it shows that plus any mentions or direct messages. The buttons to change views are at the top, not the bottom, but they do the same things you're used to once you disable Unified Timeline.
Yes, the gestures are different. Double tapping a tweet is the same as triple tapping and presents a menu of option to manage the tweet (reply, retweet, open link, and so on). Double tapping and holding lets you copy the tweet, email it, and do other things with the tweet text. Note that adding the tweet to Instapaper or the Safari Reading List is not the same as taking those actions in links inside the tweet.
