To add a little, the button that adjusts the amount you fast forward or rewind is called Navigation Unit and is just to the right of the play/pause button.

Don't panic, though, you can still fast forward and rewind, and the mechanism is actually really clever. When you touch the play/pause button, Voiceover will announce that it is "adjustable". Double tapping will play or pause, flicking up will rewind, and flicking down will fast forward. The amount by which you can jump is controlled in the same way - the button is adjustable, so you can flick up or down until you find the increment you want.
