I'm not sure what keyboard you're referring to. With the normal
keyboard, you can get to symbols by using the more numbers button and
then the more symbols button. These are in the lower left hand corner of
the normal virtual keyboard.
You can add another keyboard by going into Settings -> General ->
Keyboard -> Add Keyboard, but most of the options here seem to be for
different languages. The exception is the Emoji keyboard, which will
give you different emoticons. You get the usual smilie faces, but you
also get pictures of buildings, people, nature and so on. You can check
it out by adding this keyboard. You'll be able to switch to it by using
a button that will appear to the left of the space button and to the
right of the more numbers button.
