I think the newer the model Bluetooth headset the less lag you will experience. Not all of them have lag and some have it worse than others. I have also found that sometimes it seems the longer they have been running the worse the lag gets so I will turn off the headset and then right back on. It will automatically reconnect and usually clear some of the lag.
If you want a single earpiece, I recommend the Plantronics M-55. For stereo I suggest the Plantronics 903. Those have been my two favorites and I have had many many models.
