So is the phone feature the only thing that won't work without a sym card?
Is there anything I need to do other than removing the sym card in order to
make this happen?

The answer to this question depends on a lot of things, but before we
get into them, are you wanting to set up the phone from new without a
sim or are you wanting to take the sim out of an already set up phone?
