I save all my receipts mainly for record keeping, but also on the rare occasion that I want an app refund. Which, in the 3 plus years I've had an iPhone has been only once, but I was sure glad I had a receipt for that app though. There is a refund link right in the receipt email. Not sure if you can get the receipt back if it has been deleted, unless you have deleted it within the last 15-30 days and you are using a web interface to your mail, and in the case of Gmail your trash isn't emptied right away.
