VoiceOver changes how an iPhone works with respect to gestures. For
example, without VoiceOver you just need to touch an app to activate it;
with VoiceOver, you find it by touching it but you need to perform a
double tap to activate it.
For a sighted person who isn't using VoiceOver, you delete an app by
touching it and holding it. All of your apps will then start to wiggle,
and an X will appear above and to the right of each app. You can now
touch this X to delete the app from the iPhone.
Another thing which you can do, which is what I do with my wife's
iPhone, is to just take it, turn on VoiceOver with a triple tap of the
home button, and then do whatever you'd normally do with your own phone
running VoiceOver. I then triple tap the home button to turn off
VoiceOver and give it back to her when I'm done running whatever
maintenance I do for her.

I know i should already know this, but could someone please
tell me how the poor unfortunate sighted delete apps from i
Phones? I'm trying to explain it to my sighted fiancee, but having
never needed to do it this way myself, I don't know.
