As Richard and I said, we haven't found a way to change the format the
IOS email client uses when you compose a message. From Googling this, it
looks like you might be able to do it as the default if you use a Mac.
It isn't clear from what I read, but it looks like the email client on
your iPod should use the same default setting that you're using on your
Mac. I assume this is after you sync things between your iPod and your
Mac. Like I said, it wasn't clear to me from what I read that this
always worked, but it might be something to look into, assuming you're
using a Mac and syncing things with your iPod. It did seem pretty clear
that you couldn't control this on your iPod though, but you might want
to check my findings with your own Google search.

messages can be plain text messages also known as SMS which stands
for Short Message Service. SMS messages are usually limited to 160
characters when sent using a mobile device but might be limited to
140 characters when sent via a computer's email client. This also
might depend on the recipient's service provider but I have not fully
researched the limitation.
Messages with pictures or without limitation on length can also be
sent via a computer's email client. These messages are called
iMessages in the iOS world or mms messages in general. MMS stands for

The format of the sent to address governs which type of message is
sent and varies for each provider. The format begins with the
10-digit mobile phone number of the recipient followed by the @ sign
for all providers. What follows the @ sign varies depending on the
message format and the provider. Those are provided below for the
