Just as an FYI, this is documented in the IOS manual in the VoiceOver
gestures section of the Accessibility portion of the book. It doesn't
use the term bypass though, but it does explain that a double tap and
hold followed by a standard gesture will send the standard gesture to
the app. It's also discussed on the list from time to time. Both of
which are good resources, even for iPhone veterans.

The way I've found around the refresh problem is to do the
vo-bypass gesture. Double-tap and hold a part of the screen that
has text content and then flick one finger down.
