First of all, the hissy voice can be from having the compact voice on your phone. It's either enabled, or you need to download the high quality voice, which happens when the unit is charging.
As far as the pronounciation issue, if you disable siri, the enabled it, all things that siri has learned has been lost and will need to be retaught to her.
