When you open the Kindle app, there is a menu button in the top left corner of 
the screen, just below the status bar that has all the stuff like wifi status, 
time etc. Double tap that, and one of the items that comes up is a  
collections. Double tap that and you get the chance to create a new collection 
or choose one of your existing ones, if you already have some. So when you 
select create new collection, you then get an edit field in to which you type 
the name of your collection and then double tap done, if memory serves. 

When you are in a collection, there is a choice to add a book. Double tap that, 
and you are then presented with your list of items in your main library. You 
can flick through those and double tap the ones you want to add to the 
collection, which checks them for addition. I haven't done this in a while. I 
think there may be an add button at the top, or it may just be they get added 
when you  double tap, and then you hit a done button when you're through adding.

But here is the bad part. Unlike with iBooks, adding Kindle items to a 
collection does not take them out of your main library area. So, say you have a 
whole bunch of books in there, and you want to make a collection of cookbooks. 
Having gone through your entire list and double tapped all the cookbooks and 
finished the operation, when you make your next collection, say, novels, when 
you start adding books to that, you will discover that all those cookbooks you 
just added to that cookbooks collection are still listed in the main area. To 
be sure, they are also in cookbooks. But I find the fact that amazon keeps them 
in the main area to be a serious disadvantage of their organization over that 
of iBooks. I hope that helps some.
