There are podcasts that do a good job of explaining this. Clear
instructions have been posted to this list on multiple occasions. You
might try searching through the list archive.
Basically, you want to use the pinch gesture to select the text you want
to copy. Place your two fingers next to each other on the screen and
start spreading them apart to select text. The roter selection,
character, word or line, will determine how much text you're selecting.
Once you've selected the text you want, twist the roter around to the
edit option and flick up or down to copy the selected text into the
clipboard.
Once you've copied the selected text into your clipboard, go to your
email message and twist the roter around to edit and flick up or down to
paste the tet into your email message.
