Each display has special buttons - thumbkeys, joysticks, rockers, wheels, and so on. They do different things, and that link should have links to each supported display where you can see what each special control does. Also, space-k enters help mode, the same as a four-finger double tap. Use that to play with keys and things to see what they do, without actually issuing any commands. Space-b exits this mode. Also, don't forget about www.applevis.com; there are several forum topics and guides on braille with iOS I highly recommend you read.
