If it works ok with speech then it should work ok with Braille.

The automatic language switching is by design and is part of
VoiceOver.
If you use the default language of your choosing and there is
text
written in a different language VoiceOver will automatically
switch to
that language. You cannot turn this on or off I'm afraid.
