Christine, You don't select songs in your music library, you do so in your device section. Go to your device in iTunes, tab until you find the music radio button and check it. Now tab until you find "Sync All Music" and see if it is checked. If it is then this is your problem right there. Tab a couple more times until you hear "Sync Selected Playlists, Genres, Artists and Albums" and check it. Now tab more and you will find list views for playlists, genre, artist and album. Decide how you want to sync your music, e.g. by album or artist, then in that list view arrow through the available selection and check what you want. If this is still not precise enough, e.g. if you want songs from Dire Straits but not all songs from Dire Straits, then you are probably best off to make playlists with exactly the songs you want (that is done in the music library section of iTunes) and then sync only these playlists.
To delete all music simply tell iTunes you don't want to sync any music, also in the same area.
