HI Alan, I just did a little experimenting with ClearRecord, which is another recording app. I like using this app because it will immediately begin recording once launch--no fumbling for the record button while others are waiting. <Smile>.
When I record short messages and or take down phone numbers, I simply double-tap on the bottom right-hand corner of the screen since ClearRecord is the 4th item on my dock, and the recording begins. In terms of what you want, you might want to use a Bluetooth earpiece then begin the recording. Once the recording begins, execute a 3-finger double-tap to turn off speech. The iOS sounds will still be active but no VoiceOver, and in ClearRecord, one need only execute a 4-finger single tap to be placed on the last item on the screen, and I can then single swipe to the left once to access and double-tap the "done" button. At this point the recording stops. I kinda like how this works since once the recording stops, the audio is returned to the earpiece. This is a great little "alarm" because if you hear your iDevice in your Bluetooth earpiece, this means the recording has accidentally stopped mid-recording. I'll still have to experiment to see if I can find a manner of pausing mid-recording, but I'll have to work on that when I have a bit more time to experiment.
