Yes, you can leave the probes in the meat. They're linked via bluetooth to
your phone so you can watch the temperature or just wait for the preset
alarm to sound.
If you leave the probes in and you need to turn the meat, you will need good
oven-proof gloves to extract the probes as they get extremely hot,
obviously.

Get the iGrill; you can set two different probes and have it warn you or you
can monitor the temp via the iPhone.
