Without a SIM Card your iPhone 5S will be an iPod Touch on steroyds. Nothing is erased, you can play games and use all apps including Whats App, but of course you would have to be connected to WiFi for Whats App or any other apps which require a data connection to work. Just out of curiocity, why do you want to take the SIM out of your 5S?
