As Carrie pointed out, you can use the Voice Memos app to record a message. After you saved it you can double tap on the recording, then select "Message" from the share menu. Apple also announced that in iOS 8 you can send audio messages directly from the messages app although I am pretty sure that this will only work if the recipient has an iDevice with iMessage enabled. In the keynote in June they demonstrated this and it appears to be similar to sending an audio message in Facebook Messenger or Whats App Messenger where you tap and hold a record button and hold it as long as you speak your message. Then you let go and you can send your message. Of course we have to wait another 2 months or so until iOS 8 is released to the public.
