If the mobile button is grayed out or not available, you may have to wait until that person contacts you. In my own experience, I have added mobile numbers for people, and then after they contacted me, the iPhone recognized them as having/using iPhones, and changed mobile to iPhone. Not sure, but the same would probably happen for mobile numbers. You could also add a home number, and add a note on the contact that the home was really their mobile.
