I'll add to Richard's post to clarify that what he describes is known as
hijacking a thread. The email client running on iDevices has internal
markers that link replies to their original messages so changing the subject
does not break the connection. That's why it's always better to start a new
message to the group when you're changing the subject.

I'm sending this off list as a new message so as not to add clutter to the
list, otherwise this would have gone into the thread about Jonathan's book.

If you have your Email sorting by thread, and someone hits reply on a
message about Blind Square, then changes the subject line to something about
recipes, and sends the message, then that message will show up with all the
messages in a conversation about Blind Square, so you may not think you
received any responses because you did not see any messages in reply to your
message about recipes.

So, instead of hitting reply and changing the subject line, it is best to
start a new message so it will have a thread all its own.
