If you need to set your default outgoing address, such as for mailing lists, you can do that on iOS. Go to settings, mail contacts and calendars, double tap the button for your email account, and find the "send mail from" option. I don't have an iOS7 device here at the moment to check with, so there may be one more layer before you can find the setting you're after, but you will at least be in the right place.
