Apple Pay requires the NFC chip which is only on the 6 and 6 Plus. The Apple Watch also has NFC and can be used for Apple Pay (once its released of course) and apparently it will be possible to use Apple Pay with older models of iPhones together with an Apple Watch. Of course we don't at this point know if the Apple Watch is accessible or not.
