If it is working as it was in iOS 7 it would undo whatever the last batch of
text was you dictated not the entire text.
I find that dictation for me works best especially when I dictate longer
like when replying to an email if I dictate shorter passages rather than
trying to dictate the full 30 seconds which I believe is the limit.
Has anybody noticed the sounds you hear now when dictating? Visually text
now appears in your edit field as you are dictating it, it is much more
responsive.

must try that.  But a further thought, if you dictate in small amounts, 
will it only select the last addition, or the whole text so far?

Whenever I shake my phone to undo a dictation it only select the text but
