My phone is doing this as well ever since the update to iOS 8. I have not checked the time to try to determine whether it is happening at specific intervals since I only notice it when I have the headset disconnected. it is either the sound that indicates swiping to a new page or the sound that plays when it is not possible to flick in a direction. I know these sounds have actual names but I didn't memorize them.
