Once you are looking at the Today view in your Notification Center, go to the 
bottom of the window and flick left. You'll find an Edit button; double tap 
that, and you can delete Stocks from the section of included widgets. 
Incidentally, this is where you add widgets from any app you have on your 
device that offers one, and where you can re-order the ones you use.
