I'm not aware of a way to set up rules locally on your iPhone with the
native Mail app. Since you're using Gmail, you could do this at the
server by using Gmail's web interface.
I'm not sure how you're moving messages to the Trash folder, so I'm not
sure what would be easier, but to delete messages, I usually do one of
two things.
First, if I'm in the list of messages or threads then I'll just flick up
or down to the delete option and double tap. This will work if you're
roter is set to action which should be the default when you're in your
message list. This will also delete the whole thread if your in your
list of threads and your focus is on a thread of messages.
When reading a message, you can double tap the delete button at the
bottom of the screen, just above the home button.
