Well, as I imagine you know, when in a text editor or word processor on the 
phone, you can do a two-finger double-tap, or activate the Dictate button, and 
dictate.  You'll be able to do about 30 seconds at a time and can just keep 
appending.  Dragon Naturally Speaking does exist for the iPhone, but since the 
native dictation was implemented, it hasn't gotten much attention, and I don't 
have any reason to believe it is significantly, if any, better in quality than 
the built-in dictation.
