So at this point you have resized the image and told the kernel about it, you're done with the virt-specific part. The rest should be the same as on physical hardware. A quick search on the net suggests indeed that you can't modify a partition that is mounted/in use by LVM. So I'm afraid a new partition that is added to the VG must be good enough.
