Just to update slightly. 

You can run z/VM on multiple processors OF THE SAME TYPE! That is, if
you have both CPs (general purpose processors, like for z/OS) and IFLs
(z/VM and/or z/Linux use only, no z/OS), you cannot run both CPs and
IFLs with the same z/VM instance. You can have one z/VM control all the
CPs in one LPAR and a separate z/VM run the IFLs in a separate LPAR. You
cannot assign a CP and an IFL to a single LPAR. And, just to be silly,
you cannot run a single instance of z/VM on multiple LPARs (although you
can share some of the z/VM DASD volumes, if you know how - I don't know
how).
