TightVNC has that option - http://www.tightvnc.com - it's a registry entry,
it's DisableTrayIcon or similar - it might even be in the configuration GUI.
Since eSVNC is based on Tight, I think it would probably work on that as
well...

Perhaps someone who's actually used that option can comment (unlike
myself)...
