I found my problem, now I need a solution. For some reason, when I
start WinVNC as a service, it isn't logging. If I run WinVNC as an
app, it does. Are there extra parameters needed in the net command
when the the service is started?

Which OS are you running the server on?

Linux/Unix - It already creates a log file at
~/.vnc/<machine_name>:<port>.log

Windows - More complex.
1) Right click on the Tray icon and go to properties
2) Click on the advanced button
3) In the bottom right corner of the dialog box turn logging on.
