That depends if you are running Windows or a *nix. For Windows there is a registry key to turn on debug logging at http://www.uk.research.att.com/vnc/winvnc.html . I had trouble getting it to work (I think I forgot to make them DWORD values). If you are using TightVNC it is in the "Advanced" button in the GUI. I took a quick look at Xvnc and didn't see anything about logging, but someone else might have more experience there.
