For a secure connection, is there anything other the SSH or VNC that
doesn't require installation. Using Internet Cafe's etc, installing software
is not recommended.

Is there a secure Applet?

The HTTP communication is just used to deliver the applet.  The applet
itself works the same as any other viewer and uses the RFB port (default
5900+display).
