If, the PCs are going to be workstations where someone will be available to start a connection, try the add new client feature, you will not need to config their firewall or know their IP. At least this would help temporarily until you work out the issue. I suppose you could schedule a script to connect you at a specific time, too.
Also, it depends on the ISP. Some have very short lease times on their DHCP servers, some will last weeks unless you turn off the router. If, its short even the dynamic IP may be tricky. If, its long you can just record it and update your notes as it changes. Too bad static IP usually cost too much, for the are often part of a business package.
