Once, someone told me an "undocumented" method to remove the VNC icon from 
WinNT platforms.

        Using regedit, remove the "WinVNC" value from the this registry key and reopen 
the session:

HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Windows\CurrentVersion\Run
