Tim, Port 6001 is not a port number used by VNC, but by X. Any configuration options that would allow a normal X server to "listen" on only a particular network interface should work as expected with Xvnc. In particular, you should be able to tell the X server not to listen on any network ports at all, just to use local "unix domain" ports.
