I have used VNC v3 and v4 with pcAnywhere 10.5 on the same Win2000Pro host machine for a long time with no problems whatsoever, even if logged in with both at once (which I usually am). I haven't tried the just-released pcAywhere 11.5 yet.
As for uninstalling pcAnywhere...well it's a kinda nasty beast about that. Simple uninstallation Leaves behind registry entries and stuff. There's a paper in the Symantec website knowledge base that describes how to completely erase all traces of pcAnywhere.
