Get a copy of ATTACKER.EXE over at www.foundstone.com from the resources link.
You can set it to monitor the VNC Server port. It will play a .wav file and alert you to a connection on that port. Of course it will initially block the connection until you STOP the program and your tech will need to try to connect a second time to actually connect, you'll also have to stop and start the program before and after each connection, but at least you'll know if this person is trying to connect...
