Gerry,

Gentoo is a distinct Linux distribution from Fedora Core, so following
instructions aimed at one will not necessarily work for the other.

Recent versions of Gnome appear not to cope with having multiple instances
running on the same machine for the same user - in general the second and
subsequent Gnome desktops just don't work at all. So if you're logged on on
the console of your system when you start your VNC server desktop, you'll
find that Gnome inside that desktop won't work.

The problem with menubars & themes sounds like a Gnome issue, possibly
related to the multi-session problems with Gnome. I'm surprised that you
get any Gnome components at all running the second session, to be honest!

Regards,

Wez @ RealVNC Ltd.
