I have that problem with some systems... I generally have to go in and change the settings for that particular session manually to force the number of colors down and also to change the encoding. You might try that. Or you might want to try a different version of VNC to see if that helps any... also, check your server-side settings to see if you're set to poll the desktop for changes or if you're using VNC Hooks.
