Read the Fine manual at:

It lists some advanced reg settings. Like preventing closing the server or
displaying properties.
Also consider TridiaVNC, it has an option to hide the tray icon. Although I
don't see what you can work on without the user noticing. They would see
the cursor moving around and keys being typed. Or do you want to spy on
people as they work?
