Just find someone to act as a third mx record for you that is not
on your network and alter your dns for that client before the move.
 
Of course all your dns servers are not going to be offline are they?
 
If the volume won't be to high during the change then drop me a
private email and I'll setup my box to queue your mail while
your offline. Maybe you can reciprocate one day ;-)

Hello,
I have a client running Exchange 2000 and we need to move to a new server.
We can only do this after hours and the server will be down for about 10
hours during the move.
We run VOPMail 5 and act as a backup domain for this client.  I need a way
to hold their email during the period of migration and I need suggestions.
I cannot setup a catchall account as alot of the email is confidential and
there will also be 1000's of messages.
I was thinking of using ERTN or some other way to prevent NDRs being sent to
people trying to send to their domain.
Any suggestions would be great.
